SERVSAFE FOOD PROTECTION MANAGER CERTIFICATION 

National Restaurant Association ServSafe Food Protection Certification program provides high-quality food safety examination materials for the restaurant and foodservice industry. The ServSafe program is recognized and accepted by more federal, state and local jurisdictions than any other food safety programs. TheServSafe Examination is secure, copyrighted, and developed independently of ServSafe training materials.

WHY

The FDA recommends to local health dept regulators that there are many ways to achieve active managerial control and reduce the risk of food bourne illnesses in an operation:

*Training programs (ServSafe or equivilent)

*Manager supervision

*Incorporation of standard operating procedures (SOPs)

*HACCP

These are critical to the success of active managerial control:

*Monitoring critical activities in the operation

*Taking the necessary corrective action when required

*Verifying that the actions taken control the risks factors

*Knowledge of Manager in Charge
